Looks pretty well-done to me and seems like it's gonna go for the 24 episode run.

Also, I've gotta ask:
What the heck is up with Rimuru's voice actress?
After having been with the series quite some time, this voice sounds ridicously out of place.

Well, I havent started the LN yet, but I DID read the manga, which follows the LN version.

From what I can tell they start out mostly the same, but after the defeat of the orc king the story seems to start diverging a bit. Judging from the LN illustrations in later volumes, the story seems to follow mostly the same storyline, but I suppose Fuse decided to flesh out some backstories and make some stuff more interesting. A pretty well done WN-LN transition if you ask me.

based off the characters in the opening itll def go past the banquet which would b a decent stopping point. after that it gets a bit complicated

Agreed.
Plus on MyAnimelist, Diablo is listed as a "supporting character", which means he'll appear in the anime at some point.
His summon happens right after Rimuru massacring that army, so the anime will at the very least show Rimuru's ascension to a demon lord.

But yeah, the conference would make for a pretty good ending, since it is a pretty big milestone in the story.
As for pacing, I suppose the mid-point at episode 12 will most likely be the fight against Charydbis (a new boss enemy from the LN). It seems to happen pretty conveniently at the mid-point between Rimuru's reincarnation and his ascension to demon lordhood and the subsequent conference.
